Classic, pure, gentle botanicals of dried juniper then sage, spice and white floral notes, a mineral quality adds an unexpected complexity. Uncut - the alcohol delivers a sting mid-palate then calms immediately to release and generous, warm and gently peppery and classic flavour. Smooth, silky touch remains persistent and flavourful. Cut the flavours become a little coarser and releases a lot more spice and pepper highlights. Eventually the texture settles back to what the bouquet and un-cut qualities showed. I suggest a simple tonic or very mild home made dry-lemonade.
