Taylors 'Legacy' Cabernet Sauvignon 2016, Clare Valley, South Australia

Complex and layered, subtle scents of violets and clay, violets, iron sand and fresh tobacco. Heirloom framers market blackberry fruits, licorice and plum skin, there’s purity and freshness, a whisper of hay and blonde tobacco then kitchen cupboard spices and smoke. On the palate a wine of power, texture, length and concentration. A taut texture from tannins and acidity, flavours of myriad red berries and fabric, some new leather then baking spices, wood smoke and blackberry. Tannins and a mix of needle point through fine sandpaper, acidity delivers back bone and freshness, there’s a touch of salinity there as well. Lengthy and detailed finish, a wine that changes and grows as it opens out in glass. A young wine that will continue to age and develop. A suggested best drinking window is from 2030 through 2050.

I have tasted this wine just once before at a wine dinner in Sydney, it was with the team from Taylor’s and other invited guests. At that time I saw it as an excellent wine, age worthy and fine. Now I have the chance to really taste it without the distractions of noise, cooking smells and too much perfume and aftershave from others in the room.
